Almond pesto - About Subtle as a shovel to the face - This short video recipe, but very green for a pesto almond rocket, shows one of my favorite uses for the ubiquitous green bitter. I would like a rocket salad as much as the next guy, but it's also nice to use green pepper as something more than lettuce.

Arugula is also quite a beautiful plant. Fragrant, spicy, crunchy; it makes a hell of a good pesto. I paired with raw almonds for a combo that was simply amazing on the hanger steak grilled you can see here. Subtle it is not, but it goes sometimes.

I know the conventional wisdom with most sauces is that they should complete the main ingredient, not control it. Here, it simply is not worth. Not only this sauce overpowered everything you serve with it completely obliterates. But it works!

As you do what pesto, your subconscious will take over, and changes in the final product magically enjoy whatever your food with it. Of course, like most of my best thinking, I can not prove it.

As I mentioned in the video, when shopping for arugula, try to get some fully grown leaves. This soft, ultra-baby stuff make a nice salad course, but for a sauce like this, you want the danger, the more fully developed flavor of mature leave. I hope you give this easy recipe to try. Enjoy!



Ingredients:
Large handful of rocket leaves, blanched
1/3 cup olive oil
1/3 cup raw almonds
4 cloves garlic
salt to taste
