Those of you expecting a sort of char-grilled piece o meat "GREASE glowing-in-the-sun type video for Memorial Day will probably be disappointed to see this humble dish of zucchini. I can not blame you. It is courgettes for heaven's sake.
I was busy traveling on some trade secrets trips recently, so while I would normally have difficulty feigning such excitement on the squash, given how much time I had, I'm actually pretty happy with how it came out.
I did not start trying to make a creamy zucchini recipe, but when I looked in the refrigerator and saw the last remnants of crumbled cheese cream, I knew these green cubes sizzling away in the pan were about to get rich.
As I said in the video, it would be a pretty nice side dish for everything grilled meat you will tong summer, or as an impressive base for grilled chicken, fish or shrimp. Also, to get the extra fancy, use the cream (preferably homemade) instead of cream cheese. Have fun!
I would like to wish you all a wonderful and safe Memorial Day. We hope you will join me to take a moment to remember all those who gave their lives to protect our freedom and way of life.
