As you will hear me in the clip, which is really a great meal in cold weather. But instead of waiting 6 months for the show, I thought I would put on the blog now for several good reasons. First, while it is a classic winter dish, it is delicious at any time of the year, and the ingredients are easy to find, no matter what the season. Second, the summer kitchen is all about fast, easy, and this recipe of a dish definitely qualifies. Remember "braised" does not always mean slowly cooked. Finally, what a great reminder to enjoy every second of this summer wonderfully warm, because before you realize that you will be raking leaves in a sweater.
A quick note about shopping for chicken sausage apple. Due to the recent increase in popularity of chicken and sausage-based turkey; many large grocery stores can store up to 4 or 5 different brands and varieties. But, be sure to check the labels! Some brands (other generally cheaper) have just as much fat as sausages made from pork-conventional they are supposed to be a healthier alternative too.
Ingredients:
4 smoked chicken apple sausage (1 pound)
1 1/2 c butter
1 teaspoon of olive oil
3 cloves garlic
1 pound new potatoes ( I prefer Yukon gold or red)
1 yellow onion
3 cups apple cider or juice
1 green cabbage, grated (about 1 1/2 lb)
salt and pepper salt
Dijon mustard and fresh parsley for garnish
