We have certainly grown up around a ton of food is good, but being fairly modest means, we n 'enjoyed the expensive luxury foods such as lobster or Prime Rib once in a great while. Whenever such opportunities have presented themselves, my father John would always use the same joke. He took a bite of everything and tell the table with a twinkle in his eyes, "I wonder what the poor people are having for dinner tonight?"
We would all laugh, but it was more than just a one-liner for him. The son of immigrants in rough and tumble New York, he grew in less than a sumptuous setting. You could tell he loved being able to afford to splurge on things like lobster once in a while, and I'm sure we ate he thought to time much leaner.
Anyway, enough with shellfish selfish reminiscence. When and if you are in possession of a few leftover lobster meat, I suggest you do what I did in this video. also, feel free to borrow my father's joke, but only if you are also modest means, otherwise it's just not funny. Have fun!

4 eggs
handful of pieces of lobster, cut into chunks, sprinkled with cayenne pepper
tarragon leaves to taste
salt and fresh ground black pepper to taste
