"Homemades" - Making Pasta with Uncle Bill - If you watched my video recipes for a while, you've probably heard of my Uncle Bill more Once. Several Italian dishes on the site are variations (or exact copies) of its revenue that I loved growing up. So before leaving New York, I wanted to try to capture Uncle Bill in action. This fettuccine house has always been called "Homemades" around the house, and I thought I would post this recipe with her own family name.

I enjoyed this very basic pasta recipe, but delicious, which was made in either spaghetti or fettucine each Christmas when Uncle Bill would cook a special feast for the family. There was always this house pasta (I mean "Homemades"), and the sauce, chicken and herbs, bracciole, salads, and countless other Italian specialties (not to mention incredible pies my aunt Angela).

I do not have much time this morning, but I'll add more to this post later today, including the list of ingredients. As I already said, this is a simple recipe that uses only regular flour AP. You can of course use semolina flour mixture as many pasta recipes suggest. But this recipe is very easy to use, and if you've never made your own pasta before, this would be a good place to start. Moreover, these pasta machines are surprisingly affordable for your mega-store or Bed Bath and Beyond home-places like local goods. Take one! The white motor that you see attached to the pasta roller in the clip is also sold in the same stores, and made to fit almost any model pasta machines. It makes things a little faster, but I kind of missed the crank handle on the machine by hand.

Ingredients :!
2 1/4 to 2 1/3 cup flour AP (you can always add more flour, but do not take it out, so even if we started with 2 1/3 cups, it may be best to start with 2 1/4, and then add a little more if it seems too sticky.
2 large eggs
1 teaspoon salt
1 tbl olive oil
1/3 cup water
